Cranksets
The crankset is where Dura-Ace justifies its premium most convincingly: CNC-machined hollow glide chainrings, carbon-wrapped hollow crank arms, and exclusive 54-40T and 167.5/177.5 mm sizes. But the weight difference is only 20 g over Ultegra (682 vs 702 g, independently measured) — and 105 adds just 54 g more. For the price difference (Dura-Ace ~$780, Ultegra ~$450, 105 ~$220), Ultegra is the clear value pick. The 54-40T chainring option is the only functional differentiator that Dura-Ace holds.
All three use Hollowtech II 24 mm spindles and the same BB interface (BSA threaded or press-fit). Chainring bolts and left-arm preload cap are identical. The left crank arm on Ultegra (193 g) is actually 4 g lighter than Dura-Ace (197 g) due to the carbon-wrap vs. hollow-forge design trade-off.

Cassettes
The cassette is where the R9200/R8100 divergence is starkest — and has the most rider-relevant trade-off. Dura-Ace uses titanium for the 6 largest sprockets (about half the cassette by count); Ultegra and 105 use steel throughout. Titanium saves 85 g on the 11-34T cassette (253 vs 345 g), but costs 3× more ($445 vs $150).
For the 11-30T versions, the weight gap is smaller: Dura-Ace 223 g vs Ultegra 291 g (68 g difference). The 11-30T cassette has the full 11-12-13-14-15-16-17-19-21-24-27-30 progression — no missing cog. The 11-34T drops the 16T sprocket in favour of a 34T bail-out gear, which creates a noticeable jump between 15T and 17T.

Rear Derailleurs
All three use Shimano's shadow-design Di2 wireless architecture. Shift speed and accuracy are identical — the weight difference comes entirely from materials (carbon cage on Dura-Ace, aluminum on Ultegra/105). Chains
Shimano's 12-speed road chains use the same HYPERGLIDE+ plate profile and quick-link (SM-CN910) system. The CN-M9100 (XTR/Dura-Ace level) is the lightest at 242 g including quick-link. Bottom Brackets
All three cranksets use the same 24 mm Hollowtech II spindle, so any Shimano road BB works. The BB-R9100 (Dura-Ace) uses smaller, higher-grade steel bearings — marginally smoother but same service life. For threaded (BSA) frames, BB-RS501 is the pragmatic choice. For press-fit frames (BB86/92), consider third-party thread-together BBs (Wheels Mfg, Token, BBInfinite) to eliminate creaking — Shimano's press-fit BBs work fine if the frame's BB shell tolerances are tight.

Value analysis: where the money goes
Dura-Ace R9200 (disc) groupset total: ~2,058 g at ~$6,500+ retail. Ultegra R8100: ~2,349 g at ~$3,000. 105 R7100: ~2,562 g at ~$1,500. The numbers tell a clean story: the jump from 105 to Ultegra saves ~210 g and costs ~$1,500 — about $7/g. The jump from Ultegra to Dura-Ace saves ~290 g and costs ~$3,500 — about $12/g. That's the definition of diminishing returns.
The functional difference between Ultegra and Dura-Ace is effectively zero: same shift speed, same brake feel (servo-wave mechanism identical across all three tiers), same Di2 wireless protocol.
